Banana and Choc Chip Loaf

Makes one large loaf
250g plain flour
1 tsp bicarbonate of soda
1 tsp baking powder
Pinch salt
135g dark choc chips
75 chopped pecan nuts
30g unsalted butter
50g crunchy peanut butter
230g caster sugar
2 large eggs beaten
3 bananas mashed
Seeds from 1 vanilla pod
Sift together the flour, baking powder, bicarbonate of soda and salt in to a large bowl and mix in the chocolate chips and pecan nuts and set aside.
Cream together the butter, caster sugar and peanut butter and then gradually add in the beaten eggs, now add the vanilla and mashed banana and mix well.
Fold in the flour mixture until you have a thick batter, then pour

Homemade Ice-cream

Makes plenty
600 double cream
600 ml full fat milk
250g caster sugar
2 vanilla pods
6 large free range egg yolks

Place the canister from your ice cream maker in the freezer overnight the night before if that’s the type of ice cream maker you have.

Split the vanilla pods lengthways and scrape out the seeds, place the seeds and the cut pods in a large pan with the milk and the cream. Place on the heat and bring to the boil, as soon as it comes to the boil remove from the heat and set aside. Beat the egg yolks with the sugar either by hand

For my final instalment of this years 3 course Christmas dinner i’ve gone for a happy medium, a mix of both modern and traditional, i’ve taken  the classic trifle, something that graces many peoples dining table at Christmas, and given it a bit of a kick up the butt.
